The origin of old Split is a single monumental complex: the palace that Roman Emperor Diocletian had built at the end of the third century to spend his retirement in the country (and to cure his rheumatism in the sulphur springs). There were residential buildings, a temple of Jupiter, baths and barracks. The enclosure of the Dioklecijanova Palace still gives style to the waterfront. In the Middle Ages, houses were added inside and out, the palace was bursting at the seams and became a city. The Emperor's mausoleum was transformed into a Christian church with a 12th-century bell tower and a 17th-century choir, and it is now St Domnius Cathedral. Venetian architects also came here to practice their craft. There are lots of nooks and crannies to explore, plus hidden little spots to enjoy a maraschino and pancakes.
Already in the itinerary - Split Market Walk. You have markets on either side of the palace - the Pazar fruit and vegetable market is to the east, and the fish market is located to the west. You'll have the chance to stop and shop at the former with a private expert guide. All farm produce from the Dalmatian hinterland ends up here and people chat over produce from vegetable gardens, fields and orchards. Once the shopping bag is full, you can take your produce to a chef, who will cook it up in his restaurant into a specially-made dish for you.
Pick up the hire car and drive to Dubrovnik. Enjoy a two-night stay east of the Old Town. The historic part of the town dates back to 1913. The town's current style is resolutely international and contemporary. The three restaurants serve up their own interpretations of Mediterranean cuisine, from salads and soups to hearty stews and gourmet fare. In the wellness area, you'll have access to an indoor freshwater pool, sauna, Jacuzzi and gym, plus direct access to the private beach from the spa. From your window you can see the sea. From the long terrace, you'll have another sea view and a view of Dubrovnik's ramparts.
The large fountain of Onofrio della Cava (built in 1438) which is connected to an aqueduct, marks a breakthrough for municipal water supply compared to archaic collection tanks. The water springs out of the mouths of sixteen mascarons, which visitors might recognise from Game of Thrones. The funicular, one of the major local attractions during the last twenty years of Yugoslavia, is now back in service after a lengthy restoration. It takes you to an altitude of 1,300ft in four minutes, with a splendid view of the city, and it's a wonderful experience to sit a drink on Mount Srd as the sun sets over the sea, In addition to these few tips, you can check out a host of major monuments, and enjoy all the pleasures of a radiant sea and savour Turkish coffee.
